| Jason's Meatloaf |
Preparation Time: 10-15 minutes
Cooking Time: 1 hour, 10 minutes
Serves 4

| 1 medium onioncooked, finely chopped |
| 1 small green bell peppercooked, finely chopped |
| 1 egg, lightly beaten |
|
3/4 cup rolled oats
1 Tbsp. Hunt's Ketchup
|
| 1 cup (1 of those small cans) tomato sauce |
| 1 Tbsp. A-1 Steak Sauce (I prefer the Roasted Garlic) |
| 3/4 tsp. garlic salt |
| 1 lb. ground beef |
|
1/2 lb. lean ground pork
1/2 lb. lean ground veal or lamb
|
| 2 Tbsps. all purpose flour |
|
1 cup beef stock + another cup/can of tomato sauce
1 extra Tbsp. of A-1 Steak Sauce
|
(optional: fresh thyme & Tabasco Sauce) |

Preheat oven to temperature 375°F. Combine first 8 ingredients and fresh ground pepper to taste in a medium bowl. Stir with a fork to mix. Add the ground beef, the ground veal/lamb, and ground pork and blend well. Rinse an 8x4 inch loaf pan with cold water. Shake out excess water but do not dry. Pack the meat mixture into a rinsed pan. Invert and unmold meatloaf onto a lightly oiled baking sheet. NOT cooking it in a loaf pan gives the meatloaf more surface area to brown and it won't be swimming in its own fat. Bake about 1 hour or until a meat thermometer inserted into center of loaf reads 160°F. Let it stand 5 minutes. Drain off excess fat into a small bowl. Measure out 2 Tbs. fat and discard the remainder (or freeze and save for BBQ Ribs). Cover the meatloaf with foil to keep it warm. By now your caregiver-recipient or other family members and/or friends are smelling this wonderful aroma, and they're getting impatient. Heat reserved fat in a medium saucepan over medium heat. Sprinkle in flour and cook about 2 minutes...whisking constantly...until flour is lightly browned. Whisk in beef stock, 2nd can of tomato sauce, and extra tablespoon of A-1 Sauce and bring to a boil, whisking until thick and smooth. Reduce heat to medium low and simmer 5 minutes...stirring often.
(Depending if I was making it for the sensitive tummies of my late Mum & Dad, I would split the gravy into 2 pans...and add a pinch of thyme and a teaspoon of Tobasco sauce in mine). Season with kosher salt and pepper to taste. Slice meatloaf and serve with gravy. It'll REALLY serve 6, but you may regret not being able to make a couple of meatloaf sandwiches the next day.
