Broccoli Souffle'

Ingredients
3 Tbsp butter
3 Tbsp flour
1 cup milk
6 eggs, separated
2 pkgs. chopped broccoli (10 oz) thawed, uncooked and drained
(or 2 cups chopped partially-cooked broccoli [15 minutes.]--”I always use the fresh”
1 cup mayonnaise (Miracle Whip)
1 tsp salt
1/4 tsp pepper
6 Tbsp chopped celery
3 Tbsp minced onion ( chopped whole onion is what I use)
Instructions
Melt butter and blend in flour. Gradually add milk, stirring and cooking over moderate heat until thick. Beat yolks. Blend together the white sauce, yolks, broccoli, mayonnaise, salt and pepper, celery and onion. Beat egg whites until stiff. Fold them into broccoli mixture. Pour all into greased 2-qt casserole and set in another pan with hot water about 1" around it. Bake at 350 degrees for 1 hour or till knife inserted comes out clean. |
